Component (a): edible protein, component (b): edible oil and fat containing 10 mass% or more highly unsaturated fatty acid having three or more double bonds with fatty acid composition, component (c): polyhydric alcohol or saccharides, and component (d): water.SELECTED DRAWING: None
【課題】本発明の課題は、高度不飽和脂肪酸含有油脂の含量が高く、酸化劣化臭が少ない乳化組成物であって、さらに水分散性、分散後の乳化性に優れた乳化組成物を提供することである。【解決手段】上記課題を解決するために、下記の成分(a)〜(d)を含有する乳化組成物であって、成分(a)の含有量が0.05〜5質量%であり、成分(b)の含有量が50〜95質量%であり、成分(c)の含有量が1〜40質量%であり、成分(c)の含有量と成分(d)の含有量との和に対する成分(c)の含有量の質量分率[(c/(c+d))×100(%)]が60〜99質量%であることを特徴とする乳化組成物を提供する。成分(a):食用タンパク質成分(b):二重結合を3以上有する高度不飽和脂肪酸を脂肪酸組成で10質量%以上含む食用油脂成分(c):多価アルコール又は糖類成分(d):水【選択図】なし |
