Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a non-crosslinked gelatin that has a relatively high melting point of about over 30°C, and can cause sol-gel transition at around a biological temperature.SOLUTION: The present invention provides a non-crosslinked gelatin, the 5 mass% aqueous solution of which shows following properties (i) and (ii): (i) it has a melting point of 31°C or more by the PAGI method; and (ii) it maintains the gel state at 32°C for 3 hours or longer.SELECTED DRAWING: Figure 1 【課題】３０℃を超える程度の比較的高い融点を有し、かつ生体温度付近でゾル−ゲル転移を起こすことのできる非架橋ゼラチンを提供する。【解決手段】非架橋ゼラチンは、５質量％水溶液が以下の特性（ｉ）および（ｉｉ）を示す。（ｉ）パギイ法による融点が３１℃以上である。（ｉｉ）３２℃で３時間以上ゲル状態を維持する。【選択図】図１
