【課題】本発明の課題は、飲食物の酸味を低減及び/又は甘味を増強する、飲食物の風味改良剤、及び飲食物の風味改良方法を提供することである。また、酸味が増強及び/又は甘味が増強された野菜及び/又は果物を含有する飲食物、及び飲食物の製造方法を提供することである。【解決手段】飲食物に、トリグリセリドを構成する脂肪酸として、炭素数6〜12の直鎖飽和脂肪酸を有するトリグリセリドを添加する。また、飲食物は野菜(但し、青汁食品を除く)及び/又は果物を含有することが好ましい。【選択図】なし |
