Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a composition that can reduce the oil-off of a plastic oil/fat composition even when the content of saturated fatty acid and trans-fatty acid of an oil/fat used as a raw material for plastic oil/fat composition is reduced, and to provide a manufacturing method thereof.SOLUTION: Provided is: a composition having an oil-off reducing action comprising a saturated fatty acid-bonded type monoglyceride di-fatty acid ester and a saturated fatty acid-bonded type sucrose fatty acid ester; a composition in which, among the fatty acid residues of the monoglyceride di-fatty acid ester, stearic acid is 50 mol% or more, and among the fatty acid residues of the sucrose fatty acid ester, stearic acid residue is 50 mol% or more, and stearic acid residue and palmitic acid residue are 90 mol% or more; and a composition in which the fatty acid residue of the monoglyceride di-fatty acid ester is one bonded to 1,3-position of glycerin skeleton and the average bond number of fatty acid residue bonded to hydroxyl group of sucrose residue of the sucrose fatty acid ester is 2 to 8.SELECTED DRAWING: None
【課題】可塑性油脂組成物の原材料として使用する油脂の飽和脂肪酸及びトランス脂肪酸の含有量を低減した場合でも、可塑性油脂組成物のオイルオフの低減が可能な組成物、及びその製造方法の提供。【解決手段】飽和脂肪酸結合型モノグリセリドジ脂肪酸エステルと、飽和脂肪酸結合型ショ糖脂肪酸エステルと、を含むオイルオフ低減作用を有する組成物。モノグリセリドジ脂肪酸エステルの脂肪酸残基のうち、ステアリン酸が50mol%以上であり、ショ糖脂肪酸エステルの脂肪酸残基のうち、ステアリン酸残基が50mol%以上、ステアリン酸残基とパルミチン酸残基で90mol%以上となる、組成物。モノグリセリドジ脂肪酸エステルの脂肪酸残基が、グリセリン骨格の1、3−位に結合したものであり、ショ糖脂肪酸エステルのショ糖残基のヒドロキシル基に結合した脂肪酸残基の平均結合数が2〜8である、組成物。【選択図】なし |
