Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a fine-flavor container-packed green tea beverage having a high soluble solids concentration that has a high ratio of amino acid/catechin, has suppressed bitter and astringent tastes and enhanced deliciousness, is prevented from the occurrence of turbidity and precipitation caused when subjected a green tea extract to heat sterilization and the like and has high storage stability in a container-packed green tea beverage, especially a container-packed green tea beverage having a high soluble solids concentration with a high concentration of soluble solids derived from tea leaves.SOLUTION: The container-packed green tea beverage having a high soluble solids concentration is provided, which has suppressed bitter and astringent tastes and enhanced deliciousness and is prevented from causing turbidity by performing a treatment of a green tea extract with polyvinyl polypyrrolidone in combination with a contact treatment of a green tea extract using silicon dioxide, preferably 0.05 to 15 wt% of silicon dioxide based on a raw material green tea leaf in the production process of a container-packed green tea beverage having a high soluble solids concentration. A fine-flavor container-packed green tea beverage having a high soluble solids concentration which is a clear green tea beverage causing no turbidity and is improved in flavor can be provided by performing a contact treatment with a relatively small amount of silicon dioxide in combination when performing PVPP treatment.SELECTED DRAWING: None
【課題】容器詰め緑茶飲料、特に茶葉由来の可溶性固形分濃度の高い高可溶性固形分濃度容器詰め緑茶飲料において、アミノ酸/カテキン比率が高く、苦渋味の抑制と旨味の増強が図られ、緑茶抽出液を、加熱殺菌した際等に生じる濁りや沈殿の発生を防止し、保存安定性の高い、高香味の容器詰め高可溶性固形分濃度緑茶飲料を提供すること。【解決手段】、高可溶性固形分濃度容器詰め緑茶飲料の製造工程において、ポリビニルポリピロリドンによる緑茶抽出液の処理と、二酸化ケイ素、好ましくは原料緑茶葉の0.05〜15重量%の二酸化ケイ素を用いた緑茶抽出液の接触処理とを併せて行うことにより、苦渋味の抑制と旨味の増強及び濁りの発生を防止した、容器詰め高可溶性固形分濃度緑茶飲料を提供する。本発明においては、PVPP処理の際に、比較的少量の二酸化ケイ素による接触処理を併用することで、濁りが生じない清澄な緑茶飲料であって、かつ香味が改善された高香味の容器詰め緑茶飲料を提供することができる。【選択図】なし |
