WOOD VINEGAR/BAMBOO VINEGAR AND PRODUCTION PROCESS

PROBLEM TO BE SOLVED: To provide: a wood vinegar/bamboo vinegar in which, even though many active ingredients of wood vinegar/bamboo vinegar are contained, the smoke-like malodor is removed; and a production process therefor.SOLUTION: The production process includes: adjusting the pH of a wood/bamboo dry distillation liquid to a neutral region with a base; distilling the wood/bamboo dry distillation liquid, followed by adjusting the pH of the distillation residual liquid to an acidic region with an acid; and distilling the distillation residual liquid.SELECTED DRAWING: Figure 1 【課題】木酢・竹酢液の有効成分を多く含みながらも燻製様悪臭が除去された木酢・竹酢液及びその製造方法を提供すること。【解決手段】木・竹乾留液のｐＨを、塩基により中性領域に調整し、該木・竹乾留液を蒸留した後、蒸留残液のｐＨを酸により酸性領域に調整し、該蒸留残液を蒸留する。【選択図】図１
