Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for producing a coffee extract liquid having excellent flavor and selectively reduced in excessive bitter taste and astringent taste.SOLUTION: A method for producing a coffee extract liquid includes performing extracting coffee by steps a)-c) as follows: a) a step of storing coffee granules M in a granule storing part 2 in a state of being nearly sealed by a brake member; b) a step of performing extraction by leading an extract solvent from a first direction to the granule storing part 2; and c) a step of collecting a coffee extract liquid reserved in the granule storing part 2 from the first direction. An extraction ratio in the step c) of performing collecting the coffee extract liquid by sucking from the first direction or applying pressure from a second direction facing the first direction in the step c) is preferably 20% or less.SELECTED DRAWING: Figure 2
