Zusammenfassung:PROBLEM TO BE SOLVED: To provide a flavor improver capable of improving the flavor of polyunsaturated fatty acid-containing fat over a long period, a composition containing the flavor improver, food and drink, a pharmaceutical composition or a cosmetic containing the flavor improver or the composition, and a method for improving the flavor of polyunsaturated fatty acid-containing fat.SOLUTION: Provided is a flavor improver for polyunsaturated fatty acid-containing fat containing basic peptide, preferably one or more kinds selected from the group consisting of polylysine, polyarginine, polyhistidine, histone and protamine, and also provided is a polyunsaturated fatty acid-containing fat composition containing fat including polyunsaturated fatty acid and the basic peptide. 【課題】多価不飽和脂肪酸含有油脂の風味を長期間改善し得る風味改善剤、該風味改善剤を含有する組成物、該風味改善剤又は組成物を含有する飲食品、医薬組成物、あるいは化粧料、ならびに、多価不飽和脂肪酸含有油脂の風味改善方法を提供すること。【解決手段】塩基性ペプチド、好ましくはポリリジン、ポリアルギニン、ポリヒスチジン、ヒストン、及びプロタミンからなる群より選ばれる1種以上を含有してなる、多価不飽和脂肪酸含有油脂の風味改善剤、ならびに、多価不飽和脂肪酸を含む油脂と前記塩基性ペプチドを含有してなる、多価不飽和脂肪酸含有油脂組成物。【選択図】なし
