Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for manufacturing an emulsion system food/beverage product containing proteins and fat, which incorporates, in a quality control item, a method for rapidly and highly accurately performing identification analysis of microbial species in an emulsion system sample containing the proteins and the fat by applying a MALDI method.SOLUTION: Provided is a method for manufacturing an emulsion system food/beverage product containing proteins and fat, in which identification of microbial species is performed, as a quality control item, in accordance with a method described in (A) to (D) below, in manufacturing the emulsion system food/beverage product containing proteins and fat. (A) A sample is taken from the emulsion system food/beverage product containing proteins and fat, or from an intermediate product thereof, obtained in a manufacturing process. (B) The sample is subjected to deproteinization processing using isoelectric point precipitation to obtain a microbial concentrate. (C) The microbial concentrate is washed with a surfactant. (D) A microbial kind is identified by applying a MALDI method using the washed microbial concentrate as an analyte. 【課題】油脂及び蛋白質を含む乳化系試料中の微生物種をMALDI法を用いて、迅速かつ高精度で同定分析する方法を品質管理項目に組み込んだ蛋白質及び油脂を含む乳化系飲食品の製造法を提供する。【解決手段】蛋白質及び油脂を含む乳化系飲食品の製造において、品質管理項目として下記(A)〜(D)記載の方法により微生物種の同定を経ることを特徴とする、蛋白質及び油脂を含む乳化系飲食品の製造法。(A)製造過程において得られる蛋白質及び油脂を含む乳化系飲食品又はその中間製品をサンプリングし、試料とする。→(B)該試料に対して等電点沈殿による除蛋白処理を行い、微生物濃縮物を得る。→(C)該微生物濃縮物を界面活性剤で洗浄する。→(D)該洗浄後の微生物濃縮物を検体として、MALDI法を用いて微生物種を同定する。【選択図】なし
