Zusammenfassung:PROBLEM TO BE SOLVED: To provide a wheat flour composition for bread or baked confectionery, from which bread or baked confectionery having good flavor can be produced, even though it includes a bran component.SOLUTION: A wheat flour composition for bread or baked confectionery includes wheat flour and a ground product derived from wheat made in France containing at least a bran component of wheat made in France. Preferably 2 to 30 mass% of the bran component is contained in the total 100 mass% of wheat flour and the ground product derived from wheat made in France. 【課題】ふすま成分を含むにもかかわらず、風味の良いパンや焼菓子を製造できるパン又は焼菓子用小麦粉組成物を提供する。【解決手段】このパン又は焼菓子用小麦粉組成物は、小麦粉と、フランス産小麦のふすま成分を少なくとも含有するフランス産小麦由来の粉砕物とを含有する。小麦粉とフランス産小麦由来の粉砕物との合計100質量部中に、ふすま成分を2〜30質量%含有することが好ましい。【選択図】なし
