Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a chocolate for coating ice cream, which hardly separates from ice cream and to which edible materials easily attach.SOLUTION: Provided is a chocolate for coating ice cream, which contains a fat satisfying the following conditions of (a) to (d), contains 0.01 to 2.0 mass% of one or two or more synthetic emulsifiers selected from the group consisting of polyglycerol behenic acid esters and polyglycerol stearic acid esters, and is used with edible materials attached thereto: (a) a content of X3 is 7 mass% or less; (b) a content of X2U is 30 mass% or less; (c) a content of XU2+U3 is 74 mass% or more; and (d) a mass ratio of PU2/XU2 is 0.60 or more. |
