Zusammenfassung:PROBLEM TO BE SOLVED: To provide a cooked rice with assorted ingredients such as sushi rice excellent in appropriate unravelling properties, having good taste with aging phenomenon being suppressed.SOLUTION: A rice cooking apparatus includes transport means such as a conveyor which transports rice immersed in water, a steaming device which steams rice on a conveyor with high-temperature steam, and a water spraying device which feeds hot water to the rice on the conveyor in the steaming device. During the steaming step in the steaming device, cooked rice from which amylose is eluted and washed away with hot water in an amount more than the necessary for water addition in rice cooking, an etherified and/or esterified tapioca starch, and a seasoning such as vinegar for sushi are mixed.
