Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a method for producing a solid food product, which can efficiently increase a taste component in the solid food product by using an enzyme existing in a microorganism.SOLUTION: The method for producing the solid food product comprises the steps of: adding microorganisms that are cultivated beforehand to a solid food product processed by using a microorganism so that the microorganisms are uniformly dispersed in an inner part of the solid food product; subjecting the solid food product to pressure treatment which destroys a fungus body in the microorganism but does not deactivate an enzyme existing in the microorganism; and then holding the pressure-treated solid food product in a temperature zone in which the microorganism does not propagate but the enzyme existing in the microorganism can act, for a required period of time, to increase a taste component in the solid food product. |
