PROBLEM TO BE SOLVED: To provide an optical fiber production method by which abnormality is detected time by time during processing an optical fiber workpiece, and to provide an optical fiber workpiece processing apparatus used for the optical fiber production method.SOLUTION: The optical fiber production method comprises a processing step of holding an optical fiber workpiece 10P, 50 consisting of a glass body by the optical fiber workpiece processing apparatus and applying thermal processing to the optical fiber workpiece 10P, 50 . In the processing step, vibration due to abnormality of the optical fiber workpiece 10P, 50 being heated, or vibration due to abnormality of a glass body section 25 consisting of a glass body which is a part of the optical fiber workpiece processing apparatus under the situation that the glass body section 25 is heated by the heat for heating the optical fiber workpiece 10P, 50, is detected by using an acoustic emission sensor 7.
