Zusammenfassung:PROBLEM TO BE SOLVED: To provide a novel strain of Lactobacillus plantarum which produces an antimicrobial substance capable of suppressing proliferation of fungi, a fermented product containing Lactobacillus plantarum, being highly safe and having less influence on taste of food, drink and the like, food and drink excellent in preservability, leaven suitable for producing long-life bread, long-life bread, and a method for producing bread by using Lactobacillus plantarum.SOLUTION: There is provided Lactobacillus plantarum NITE P-1195 which produces an antimicrobial substance suppressing proliferation of fungi.
