Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a synthesizing method, capable of controlling the purity of sugar fatty acid ester in which fatty acid bonds to di-or tri-or higher oligosaccharide mixture such as sucrose or cyclic sugar such as cyclodextrin.SOLUTION: A hydroxyl group of a di-or tri-or higher oligosaccharide mixture or cyclic sugar such as cyclodextrin is previously modified by hydroxy terminal type (poly) oxyalkylene radical, the saccharide modified by the hydroxy terminal type (poly) oxyalkylene radical and the fatty acid are mixed, and enzyme (lipase) capable of reacting under a mild condition is made to react.
