Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a low-calorie substitute sweetener and low-calorie food and drink containing the sweetener having taste and body feeling equivalent to sugar because sugar is a food sweetener most familiar to consumers, but its excessive intake is a risk factor of life-style related diseases such as fatness, decayed teeth, diabetes, and a high sweetness sweetener used as a substitute is generally inferior in the balance of flavor to sugar to impart a peculiar bitter taste to cause the collapse of taste balance.SOLUTION: A tea extract with (1) at least 65% of a non-polymer catechin content per dry weight, (2) at most 2% of gallate body ratio in non-polymer catechin, (3) at most 2% of an oxalic acid content, and (4) at most 2% of a caffeine content is mixed into a high sweetness sweetener so as to satisfy (a)/(b)=1-1,000. |
