Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a self-cloning Aspergillus oryzae expressing an amidase without using induction culture and having high acrylamide degrading activity and a method for reducing acrylamide by using the Aspergillus oryzae.SOLUTION: There are provided a self-cloning Aspergillus oryzae that is transfected in a state that expresses, without induction culturing, a gene encoding a polypeptide having a specific amino acid sequence derived from the Aspergillus oryzae or a gene having a sequence hybridizable under stringent conditions with a nucleic acid molecule comprising a base sequence complementary to a nucleic acid molecule encoding the polypeptide and further encoding a protein having amidase activity; a method for reducing acrylamide comprising a step of treating acrylamide-containing matter with contact with the Aspergillus oryzae; and a method for producing a reduced-acrylamide food or beverage. |
