Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method of producing freeze-dried noodles that can be rehydrated in hot water to be edible in a short time, to be easily loosened, and to have good texture.SOLUTION: The method of producing freeze-dried noodles, includes the steps of: boiling noodles in salt water of a salt concentration of from 0.3 to 2.0 wt.%; packing the boiled noodles in a container and adding water therein to immerse the noodles in water in the container; and vacuum freeze-drying the noodles in such a state. The noodles preferably are kept below the water surface upon immersing the noodles in water in the container. The salt concentration in the salt water preferably is from 0.7 to 1.3 wt.%.
