Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a highly safe bacteriostatic agent effective for daily dishes adjusted in the range of pH 5.6-6.0, and also effective for daily dishes (for instance, room temperature cooking bread filling) productized without passing a heat sterilization process after cooking and storable for a fixed period at room temperature.SOLUTION: This bacteriostatic agent is obtained by using as bacteriostasis active ingredients, three ingredients of glycine, acetic acid or sodium acetate, and chitosan so as to suppress microbial growth in storing daily dishes (for instance, room temperature cooking bread filling) easily and effectively adjusted in the range of pH 5.6-6.0, without having an influence on the flavor taste/color/viscosity. |
