Zusammenfassung:	PROBLEM TO BE SOLVED: To provide: a novel protease capable of decomposing a protein present in a raw material such as a soy sauce and an enzyme decomposing seasoning; a novel gene encoding the protease; a recombinant DNA including the gene; a transformant or a transductant including the recombinant DNA; and a method for making the protease using the transformant and the transductant.SOLUTION: The method for making the protease is characterized by: culturing the proteins having protease activity including a specific amino acid sequence or others, a gene encoding the protein or others, the recombinant vector including the gene, the transformant including the recombinant vector, and the transformant; and recovering the protease from the obtained cultured substance.
