Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a production method of vegetable juice and/or fruit juice excellent in an action to promote mineral intake, and easy to drink.SOLUTION: The production method of vegetable juice and/or fruit juice includes a step of performing at the same time the following treatments (A) and (B) on the vegetable juice and/or fruit juice, that is (A) an enzymatic treatment using cellulase and pectinase at 25-60°C and (B) a mechanical shear treatment, wherein the enzyme gross weight in the treatment (A) is 0.15-0.4 g based on 1 g of dietary fiber content of vegetables and/or fruits, and the amount of cellulase in the enzyme gross weight is 10-70 mass%. |
