Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a retort device for securely recovering only the drain generated from condensation of steam for heating used for heat sterilization of a treated object, and reusing the collected drain.SOLUTION: A draining circuit 28 is disposed on the upstream side of a drain recovery circuit 26. By feeding steam to the primary side 1602 of a heat exchanger 16 in an initial stage of a heat-sterilization step 66, cooling water 34 remaining on the primary side 1602 of the heat exchanger 16, cooling water 34 remaining in a part of a cooling water circulation circuit 31 between first and second cooling water circulation valves 2404 and 2406 interposed in the cooling water circulation circuit 31 and the heat exchanger 16, and cooling water 34 remaining in a part of the drain recovery circuit 26 between a steam discharge valve 2604 interposed in the drain recovery circuit 26 and the heat exchanger 16 are discharged via piping 2802 and a remaining water discharging valve 2806.
