CALCIUM ENRICHED RICE AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a method for producing calcium-enriched rice, excellent in working efficiency and suitable for energy saving because a cooking step is eliminated by adding a calcium component to grains of uncooked raw material rice; and to provide the calcium-enriched rice to be used without leaving the calcium component in lumps in the raw material rice because the calcium component, stably held in rice grains till the middle of boiling, is released from the rice grains in the middle of boiling or thereafter and spread on the convection of the rice boiling over the whole rice.SOLUTION: Calcium fine powder is spread over the surface of the raw material rice by mixing the raw material rice and the calcium fine powder in a rotating box, and a gelatin aqueous solution is sprayed into the box. By spraying the gelatin aqueous solution to the surface of the raw rice from above the calcium fine powder, the calcium fine power is fixed as a layer. By drying the layer of the calcium fine power, a coating of mixture of the solidified calcium component and gelatin component is formed on the surface of the raw material rice.
