Zusammenfassung: | PROBLEM TO BE SOLVED: To provide process cheeses having excellent meltability in the mouth and free from stickiness and having a smooth texture and appearance under a condition using no additives such as a stabilizer and gelling agent.SOLUTION: A method for manufacturing hard process cheeses includes: an emulsification step of emulsifying the hard process cheeses having 3% or more and 10% or less volume ratio of air bubbles with a diameter of 10-800 μm and a cheese raw material; a viscosity measuring step of measuring the viscosity of the emulsified cheese raw material; a physical properties adjusting step of preparing the viscosity of the cheese raw material to 100±30 poise by a temperature controlling step from the result of the viscosity measuring; a step of supplying the emulsified cheese raw material in a fixed amount; and a pneumatization step of containing the air bubbles in the cheese raw material supplied in the fixed amount from the step of supplying the cheese raw material in the fixed amount. |
