APPARATUS AND METHOD OF EXTRACTING SOUP STOCK

PROBLEM TO BE SOLVED: To provide an apparatus and method of extracting soup stock capable of obtaining delicious soup stock which is transparent, and suppresses unpleasant tastes.SOLUTION: The apparatus of extracting soup stock 1 includes: a filter 20 formed in a tapered shape in which an upper side opens, and a cross section area gradually decreases toward a lower side; a funnel 22 formed so as to store the filer 20; and a first nozzle 24 for pouring hot water supplied from a hot water tank 14 into the funnel 22 between the filter 20 and the funnel 22, or from the inside to the outside of the filter 20 so that the hot water is not directly poured into soup stock materials 19. The method of extracting soup stock extracts white soup stock by inserting the soup stock materials into the filter 20 formed in the tapered shape in which the upper side opens and the cross section area gradually decreases toward the lower side, and pouring the hot water into the funnel 22 between the filter 20 and the funnel 22 or from the inside to the outside of the filter 20 so that the hot water is not directly poured into the soup stock materials 29.
