Zusammenfassung:PROBLEM TO BE SOLVED: To provide new process cheeses having good flavor expression.SOLUTION: Conventionally, there has been the requirement of increasing the addition amount of flavor substances to increase flavor expression, but nevertheless, in that case, the problem that the flavor substances effect on physical properties of the cheeses happens. So, there are provided process cheeses having good flavor expression compared with normal process cheeses, by using oxidized starch whose modified starch chemical treatment is oxidation.
