Zusammenfassung:PROBLEM TO BE SOLVED: To provide a process of recovering an aroma component from ground coffee.SOLUTION: The ground coffee is put in a mixer. The ground coffee is humidified, heated and exposed to reduced pressure to obtain an aroma containing gas containing the aroma component. 40-95% of the aroma component in the ground coffee is collected from the aroma containing gas. The aroma component may be added to concentrated coffee extract before drying the extract. Produced coffee powder has greatly increased and improved aroma and flavor, and increased β-myrcene and limonene, in particular, in reconstituted coffee beverage.
