Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for baking a food surface, in view of the fact that when heating cut rice cake by microwave of a microwave oven, the surface unhardens and becomes as hard as the inside, so the bake finish turns crepe-like without retaining a rectangularity of cut rice cake, and quick cooking with a microwave oven is difficult.SOLUTION: The method for baking the food surface includes using superheated steam as a heating source and devising nozzle arrangement and a flow pass so as to harden the surface of cut rice cake to an appropriate thickness, and stably supply a food material for microwave oven cooking.
