Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a molded food for boiled rice tastily taken as food for ameliorating/preventing life style-related diseases such as diabetes, and useful for preparing low-calorie boiled rice, and low-calorie molded food for noodle or the like except for boiled rice: and to provide a method for producing the molded food. SOLUTION: The method for producing molded food comprises: (1) a process for admixing water or warm water to starch mixture containing at least 5 mass% of resistant starch to the total mass of the starch mixture; (2) a process for heating the mixture obtained in the process (1) up to 65-90°C while stirring the mixture so as to make the mixture pasty; (3) a process for subjecting the mixture obtained in the process (2) to extrusion molding at heating temperature of 65-90°C under the pressure of 40-70 kgf/cm2when molded; and (4) a process for drying the molded mixture obtained in the process (3).
