Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for effectively neutralizing organic acid-containing substance such as Ume vinegar having strong acidity without causing degeneration of useful components such as polyphenol or amino acid in the substance. SOLUTION: The method for neutralizing organic acid includes neutralizing the organic acid-containing substance having strong acidity using mixture solution of a strong alkali and a sugar alcohol ordinarily used as food additive, food or the like when neutralizing the organic acid-containing substance having strong acidity using the strong alkali to enable neutralization of the organic acid without causing denaturation of other components.
