Zusammenfassung:PROBLEM TO BE SOLVED: To provide rolled in oil and fat excellent in expansibility and allowing to produce pastry with excellent quality, in spite of having high moisture/low oil content. SOLUTION: A rolled in oil and fat composition has an aqueous-phase viscosity of 50-850 cp at 5°C, and includes 20-55 wt.% of lard-based oil and fat in an oil phase.
