Zusammenfassung: | PROBLEM TO BE SOLVED: To provide vinegar granules produced in stable quality without getting agglomerated, enabling a user to easily make vinegared cooked rice even with a small amount of cooked polished rice without using material in vain. SOLUTION: The method for producing vinegar granules comprises: using 8-18 wt.% of vinegar, 45-55 wt.% of acidifier having a mixing ratio of citric acid to malic acid of (1-3):(1-3), 1-5 wt.% of sweetener having a mixing ratio of aspartame to sucralose of (10-30):(1-5), 25-35 wt.% of salt, and 0.1-5 wt.% of silicon dioxide; adding the malic acid, the aspartame, the sucralose and the salt to the vinegar to prepare vinegar seasoning; stirring the vinegar seasoning with hot wind; spraying warm water thereto to granulate the seasoning followed by adding the silicon dioxide and the citric acid thereto; and mixing them together.
