Zusammenfassung:PROBLEM TO BE SOLVED: To provide an additive which can retain the firmness of an ice cream composition for a long period and can improve the texture of an ice cream. SOLUTION: A food additive for an ice cream comprises a needle-like or columnar inorganic material, and is characterized in that the average particle diameter dl of the particles is 2.0 to 50 μm as measured in the direction of the longer diameter on a scanning electron microscope and the aspect ratio dl/ds of the average particle diameter dl of the particles as measured in the direction of the longer diameter on a scanning electron microscope to the average particle diameter ds of the particles as measured in the direction of the shorter diameter on a scanning electron microscope is 5.0 to 100.
