Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for producing a textured protein material having structure and texture close to protein material produced by a wet method in spite of being produced by a dry method. SOLUTION: The method for producing the protein material having fiber texture includes using a bivalent metallic compound and organic acid together in a method for producing textured protein by using a raw material derived from soybean followed by extruding the material under pressure heating, using a twin-screw extruder.
