Zusammenfassung:PROBLEM TO BE SOLVED: To provide a food fungicide having excellent mildew-proof effect for processed food from a powder material, such as bread and cake, by adding it when producing food, and enabling food production without spoiling the flavor and appearance of food. SOLUTION: This food fungicide contains a W/O type emulsified product containing edible oil and fat, ethanol, and an emulsifier. The emulsified product contains ethanol at a ratio of preferably 1-50 mass%. When producing bread, for instance, the food fungicide is added so as to bring the ethanol ratio to 0.5-5.0 pts.mass based on 100 pts.mass of wheat flour. COPYRIGHT: (C)2011,JPO&INPIT
