Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a sterilization method for preventing or inhibiting the occurrence of precipitation, scorching, color change or the like at the heating and sterilizing treatment of a milk protein-containing liquid food product. SOLUTION: The spark from electrodes at the heating and sterilizing treatment, and the scorching to the interior of the sterilizing apparatus, the occurrence of the precipitation in the liquid food product, the color change or the like of the liquid food product caused thereby are prevented or inhibited by continuously passing the liquid food product containing the milk protein through a sterilization system of a sealed system, using an energizing unit to which a voltage is applied by an alternate electric source connected to the electrodes, in an electrode structure of sandwiching an insulator with the metallic flat plate electrodes, and carrying out the sterilization thereof by the alternate high-electric field treatment under a condition of a linear velocity of ≥0.6 m/s and a temperature-raising rate of 800-2,000°C/s.
