HIGH-POTENTIAL GENERATING PLATE OF APPARATUS FOR PREVENTING OXIDATION OF EDIBLE OIL, AND APPARATUS FOR PREVENTING OXIDATION OF EDIBLE OIL

PROBLEM TO BE SOLVED: To maintain an excellent effect of preventing oxidation of an edible oil by preventing contact with an oil tank, heater, or net of a fryer. SOLUTION: In a switching regulator circuit, a direct current voltage is generated from a commercial power supply, and in a high-potential generating circuit 2, a direct current negative potential is generated from the generated direct current voltage. A high-potential generating plate 4 includes a metal plate made of stainless steel and an insulating frame made of fluororesin. The metal plate is inserted in a groove of the insulating frame, the insulating frame is bent at a part corresponding to a corner of the metal plate, and a shiplapped part is fitted. A rivet is penetrated in the fitted part to fix the insulating frame. The high-potential generating plate is installed by being immersed into in the edible oil 7 of the oil tank 6. Negative ions are generated in the edible oil by the direct current negative potential generated by the high-potential generating plate, and the acid value near a food material reaches 1.0.
