Zusammenfassung: | PROBLEM TO BE SOLVED: To provide steamed noodles coated with a seasoning liquid, making a nice-smelling baking flavor by heating in a microwave oven compatible with a smooth texture of just boiled raw noodles. SOLUTION: The top surface of a lump of steamed noodles is coated with a whipped seasoning liquid obtained by dissolving a reducing sugar activating an aminocarbonylation reaction by being heated, and gelatin as a gelling agent in a seasoning liquid containing a protein hydrolyzate and heating, and then whipping while cooling. Since flowing down into gaps of the noodles is hardly caused even after heating and melting, and heat is readily generated by heating in a microwave oven to obtain the nice-smelling baking flavor in a short time, the steamed noodles are not excessively heated.
