METHOD FOR PREPARING NUTRIENT ENRICHED RICE

PROBLEM TO BE SOLVED: To provide a method for producing nutrient enriched rice abundantly containing nutrients such as γ-aminobutyric acid, even through removing bran layers and embryo buds by rice polishing. SOLUTION: The method for preparing nutrient enriched rice includes: harvesting S1 for obtaining unhusked rice grains 2, a raw material, from rice plants in a field; a nutrient enriching process S8 of changing unhusked rice grain 2 to nutrient enriched unhusked rice grains 3, including soaking the undried and the unhusked rice grains 2 in a soaking bath at a predetermined temperature of 56°C or higher for a predetermined time to enrich nutrients of γ-aminobutyric acid, etc., in a part including endosperm part of the unhusked rice grain 2; a process S9 of drying the nutrient enriched unhusked rice grain 3; and a process S10 of obtaining nutrient enriched polished rice 5 which abundantly contains nutrients such as the γ-aminobutyric acid by polishing nutrient enriched brown rice 4a which is obtained by removing chaff from the dried nutrient enriched unhusked rice grain 4, and removing the bran layer and embryo bud.
