Zusammenfassung:PROBLEM TO BE SOLVED: To provide a material for depressing elevation of glycemia, surely inhibiting the elevation of glucose in blood by α-amylase-inhibiting activity to starch, and glycosidase-inhibiting activity and sucrase-inhibiting activity to sucrose. SOLUTION: The essence is obtained by soaking dried bark obtained by cutting stems and branches of Morus bombycis or Morus alba over from April to October, peeling the bark, drying the resultant bark in the shade for three months to dry the bark, soaking the dried bark in water, compressing and heating the soaked bark to afford an extracted essence, and spray-drying the extracted essence.
