Zusammenfassung:PROBLEM TO BE SOLVED: To provide an amylase-FSM based meso pore porous complex which contributes to realization of efficient starch hydrolysis of various starch raw materials, and facilitates recovery, recycling and continuous utilization of the enzyme. SOLUTION: Provided are the amylase-FSM based meso pore porous complex having a structure in which the amylase is immobilized in the FSM based meso pore porous, and the immobilized amylase has an enzymatic activity to catalyze the hydrolysis of starch; a method for producing the amylase-FSM based meso pore porous complex, comprising adsorption-holding and immobilizing the amylase to the FSM based meso pore porous; and a method for producing the hydrolyzate of the starch with the complex. According to the present invention, further provided are the amylase-FSM based meso pore porous complex in which the enzyme is immobilized in a highly integrated state, the method for producing the same, and the process for hydrolyzing the starch with the complex.
