Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a boiled noodles manufacturing apparatus having a boiling unit capable of setting a boiling time over a wide range steplessly while uniformly keeping an excellent manufacturing capability. SOLUTION: Noodles 1 cut out from the preceding process, passing through a noodle introducing hopper 2, are housed in a boiling basket 6 supported-provided on an endless boiling-basket conveyer 4 disposed in a boiling tank 3. The boiled noodles 1, passing through a noodle discharge hopper 7, are housed in a cooling basket 8 of the next process. The hoppers 2 and 7 are appropriately swung. The noodles 1 can be introduced on a part of the conveyer 4. Receiving/delivering of the noodles 1 are evenly and synchronously conducted.
