Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for producing an alcoholic beverage (for instance, plum liquor) reduced in ethyl carbamate levels using cyanogenic glycoside-containing fruits (for instance, Japanese apricot, plum, apricot, peach, loquat and cherry) as raw materials, and to provide the new alcoholic beverage produced by such a method. SOLUTION: The new alcoholic beverage reduced in ethyl carbamate levels is produced by a simple operation, using as raw materials cyanogenic glycoside-containing fruits; and in the production process, by adding a substance having antioxidative effects, other than the fruits (for instance, sulfur dioxide, sulfite, polyphenols, ascorbic acid, persimmon juice, (antioxidant-containing) wine, beer and fruit juice).
