Zusammenfassung:PROBLEM TO BE SOLVED: To provide a drip retarder for meat and drip retarded meat which retards alteration over passage of time at refrigeration, freezing and drying. SOLUTION: The drip retarder for meat comprises sorbit, trehalose or their combination with other carbohydrates and/or condiments, and a pH adjuster for changing the pH of a raw block meat into alkaline side. The drip retarder for meat, preferably, may contain organic acids and/or salt further.
