Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a water-soluble β-glucan material of Eisenia bicyclis origin having immuno-activating activity and diabetes-ameliorating activity. SOLUTION: The β-glucan material is prepared by extracting Eisenia bicyclis being a kind of sea algae with hot water, and adding various enzymes to the obtained aqueous solution in order to remove contaminants. The material is β-glucan of a new structure excellent in water solubility, expresses immuno-activating activity and diabetes-ameliorating activity, and therefore, it can be utilized as a material for health-functional foods.
