Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a method for recovering collagen useful for a biological material etc., from a scallop mantle which is an unutilized fishery resource with high efficiency at low cost. SOLUTION: The method for recovering the collagen of the scallop mantle is characterized by comprising a step of treating an unheated scallop mantle with an acidic protease derived from a fungus belonging to the genus Aspergillus, thereby solubilizing the collagen in the mantle and extracting the collagen. Aspergillus niger is preferable as the fungus belonging to the genus Aspergillus and the treating temperature is preferably ≤20°C. The unheated scallop mantle can be treated with an acid or an alkali before the extraction step. COPYRIGHT: (C)2008,JPO&INPIT
