Zusammenfassung: | PROBLEM TO BE SOLVED: To provide methods for simply evaluating an unpleasant rust taste derived from bivalent iron ions, even though since in the present condition, there is available only the sensory evaluation by ingesting as the method for evaluating the rust taste derived from bivalent iron ions, and the sensory evaluation cannot necessarily be called convenient, because an interval of the order of 30 minutes is necessary, for example, between one evaluation and the following evaluation under normal conditions, that makes continuous evaluation difficult. SOLUTION: (1) An evaluation method is provided for rust taste in an iron component-mixed liquid agent which is so characterized that an epidermic lipid component is added to the liquid agent for evaluating the smell produced. (2) An evaluation method stated in (1) is provided such that the iron component is a bivalent iron component.
