Zusammenfassung:	PROBLEM TO BE SOLVED: To provide a gas sensor that is sanitary, causes no functional deterioration caused by moisture contained in a perishable product and simply sensing the gas generated from the perishable product to determine the quality of the perishable product to display it. SOLUTION: The gas sensor 10 includes a gas reaction part 12 comprising an irreversible gas reaction agent, a base material 11 provided with the gas reaction part 12 and the first release base material 15 superposed on the base material 11 through a release layer 13. The base material 11 and/or the release layer 13 is adjacent to the gas reaction part 12 and first and second gas permeation parts 18 and 19 for allowing the gas reaction part 12 to communicate with the outside by releasing the first release base material 15 are provided.
