Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for producing a tea extract having less bitterness and astringency, retaining original flavor of tea, and having strong palatability. SOLUTION: This method for producing the tea extract having less bitterness and astringency, retaining original flavor of tea, and having strong palatability comprises making invertase act when and/or after extracting a tea raw material, on the tea raw material preferably at temperature of 30-80°C, for 10 min-6 h and at pH3.0-6.5.
